I checked into Elora Mill for 24 Hours—and lost all track of time

Some places allow you to slow down before you’ve even checked in. Elora Mill is one of them. The streets narrow crossing the bridge into the centre of a very European-feeling town as we turn left and head along a row of limestone buildings to the gate of the Elora Mill hotel and spa perched along a gorge right where a river cascades over limestone ledges. By the time I arrive at the ancient gate and give my name to the attendant, I am already operating on a different clock. And that’s what a short stay here is all about. Making time.

What hits home right away at Elora Mill is the level of service. It is reminiscent, in its own way, of the kind of experience associated with a Ritz-Carlton. It is professional and attentive and thoughtful, but never overbearing. There is always someone there when needed, often a step or two ahead of the moment itself. It sets a tone that is welcoming.

Perched dramatically above the gorge in what is once an 1800s mill, the property balances a nod to the area’s long history alongside refinement. The bones of the building still tell the story of its past, but inside, the experience is modern: Polished and deeply comfortable—luxury that feels considered rather than performative.

And then there’s the view. Nearly everywhere I turn, the landscape reminds me why this hotel exists where it does. The gorge cuts through the earth below, and from the mill, the perspective feels almost cinematic, it catches your gaze and never lets go. I find myself doing something I rarely do on a trip: pausing mid-moment just to look out a window a little longer than necessary.

What makes the Elora Mill interesting isn’t just that it’s a hotel. It feels more like an invitation to settle into the rhythm of the village around it—one where the day begins with coffee and a slow walk through Elora’s streets, continues with a spa treatment or long lunch, and ends with a glass of wine overlooking the river.

There are also a number of curated experiences that combine overnight stays with different types of spa access and dining, couples massage is big, and that makes planning very easy. Rather than piecing together a weekend, the Elora Mill feels designed to be experienced in layers—sleep, spa, and dining flowing naturally into one another.

We check into a “solarium” room on the second floor, and it is stunning. The space itself feels both sophisticated and grounded, with details that lean into texture and contrast with rough wood accents, sliding barn-style doors, and a layout that unfolds in a dramatic way.

Just off the entrance, there is also a separate living area opposite the bathroom, which shifts the suite from being just a bedroom into something more like a private apartment for the weekend. Comfortable chairs, a television, and an easy seating arrangement make it a natural place to unwind with a drink, have a snack, or unwind between outings.

The bathroom itself feels like a destination. A deep soaker tub sits alongside a large, open shower built for two, finished in stone and glass. It’s the kind of spa-like pace that invites one to slow down without any effort.

But it’s the bedroom that has that ‘wow’ factor.

Floor-to-ceiling windows stretch across the entire wall, opening directly onto a view of the Elora Gorge below. From this vantage point, the room feels suspended and dramatic. Where even am I? It is hard to imagine a better view from a hotel room in Ontario, or one that feels more immediately absorbing.

The spa is where the Elora Mill experience stands out in both scale and atmosphere. Spread across three levels and built in the same limestone style as the inn, it feels architecturally consistent while still being purpose-built for wellness. And like the hotel itself, its defining feature is the way it never lets one forget the gorge—always there, just beyond the glass.

The facility sits on three levels of relaxation and wellness, treatment rooms at the top, spa services in the middle and fitness, salon on the first level.

Each level seems to end in a space meant for relaxation. On the first level, a fitness area doubles quietly as a yoga and meditation space—minimal in equipment, but generous in light and air. Just outside, a balcony opens out with Muskoka chairs arranged toward the gorge.

The second level holds the core of the spa experience. This is where arrival and anticipation happen—a calm sitting room where we wait to be called for treatments, or simply settle in for a light lunch. A refreshment station is stocked with cucumber water, teas, and light snacks such as protein cookies, reinforcing the sense that nothing here is rushed or overlooked.

Treatment rooms are located on the upper level, and are delivered by Registered Massage Therapists and practitioners who bring a careful and so attentive, a grounding presence. The service feels genuinely considered rather than clinical, and in my case, the treatment itself stands out for both its skill and its care—an experience that feels restorative.

Afterwards, rather than immediately returning to the rhythm of the day, there is a natural inclination to stay and linger. A dedicated sitting room overlooks the river below, where we sit back with tea in hand, observe the gorgeous surroundings and sit with our relaxation. It is one of the most memorable parts of the spa experience, looking down over the gorge and watching the river move through the landscape below. It extends the treatment beyond the room itself, into a moment of quiet reflection.

From there, the experience continues a floor below at the locker rooms, steam rooms, and wellness facilities, leading toward the main bathing area. The pool is the wonderful centrepiece: a nice swimming area surrounded by flowering shrubs, stone walls with loungers and quiet seating areas, and a whirlpool and adjoining dry sauna completing the circuit. Everything is oriented toward comfort and recovery rather than spectacle, yet the setting itself—the stone, the light, the river just beyond—makes it feel unique and special.

What stands out most is how uninterrupted the sense of place is. Even while moving through different zones—fitness, rest, steam, swim—I am never fully removed from the gorge. It anchors the entire experience.

It anchors Elora, and it is that same drama than unfolds in the restaurant.

The space for dining at Elora Mill consists of an inner intimate room and a gorgeous sun room with three sides of completely glass.

There is room for all types of diner here, whether adventurous and conservative. Tasting menus abound, from land and sea options to special chef’s kitchen experiences, but there is plenty of options on the menu as well.

Wines and beers lean heavily into local options as does the kitchen.

Classics such as a crunchy and vibrant wedge salad with green goddess dressing and perfectly seared scallops glistening atop a light and savoury potato chowder are a delicious start.

The mains include a trio of pasta selections alongside wood-fired grill entrees. And Elora heritage chicken is rich and juicy, brought to life by spring onion puree, wild mushrooms and truffle butter. While, a vegetarian option, the Mushroom Strozzapreti, has a savoury bolognese of wild and tame mushrooms and parmesan.

There are some incredible dessert options and in-house breads are fantastic.

The baked goods are on full display over breakfast the next morning, include fresh scones and a croissant that is amongst the best we’ve had in Ontario.

And what better way to sink into the town then following such a croissant and a delicious breakfast.

You see, there is an unmistakable European sensibility to both the Elora Mill and the village around it. In Elora, stone walls soften under trailing lilacs, their colour and scent drifting into the air. Everything seems to lean toward the gorge, as if the town itself is positioned around the sound and movement of water below.

It is this relationship to place that gives the experience its depth. I am constantly aware of being perched above something dramatic and alive—waterfalls, limestone cliffs, the carved edges of the river. It creates a kind of gentle pull outward, away from interiors and schedules, toward the landscape just beyond.

The town itself is compact and highly walkable, which adds to its charm. Within a short stroll, everything is there: small boutiques, food purveyors, cafés, and galleries clustered along the river and Main Street. It does not take long to see it all, but it does take longer to absorb it.

The real reward is in the details. Narrow alleyways lead to small discoveries—artists’ studios, unexpected courtyards, and one particularly impressive glass studio that feels like it belongs in a much larger cultural centre. The Elora Bread Company is another essential stop.

Getting out into nature is also a must-do while at the hotel, which is positioned along a generous trail system that starts a few minutes north and runs alongside the gorge for miles. But there are also opportunities to get on the river, which is popular with paddlers, and at the nearby conservation area one could even get a tube and float down the river.

Two hours is enough to take it in at a relaxed pace, combining a stroll with a bit of shopping, but the temptation is always to stretch it longer and, like the river, just go with the flow.

In the end, the service throughout the stay is consistently pitch-perfect—professional, thoughtful, and quietly anticipatory in a way that elevates every part of the experience without ever drawing attention to itself. Nothing feels forced, yet nothing feels left to chance.

 It is a place that allows us to step away fully, even briefly, and then return to the city feeling as though I have been somewhere further than the map suggests.

I am already thinking about my next visit.
